Olive Oil
The flavour, colour and fragrance of olive oils can vary
from region to region. All olive oil is graded according
to is acidity and in order to be deemed extra virgin it
must have an acidity of less than 0.8% stated by the
International Olive Oil Council (IOOC).
It is widely known that the best olive oil is cold-pressed,
a chemical free process that uses pressure to extract
the oils from the olive which naturally produces a low level
of acidity. Therefore extra virgin olive is in essence the
first press of the olives which explains the low acidity
of this classification of olive oil.
